EASY OVEN-BAKED ZUCCHINI CHIPS

Image
EASY OVEN-BAKED ZUCCHINI CHIPS Snack These easy oven-baked zucchini chips are easy to make and are thin, crispy, and irresistible! Did I mention they were healthy, too? Oven-baked to crisp perfection! Here’s another zucchini recipe to add to your repertoire. Easy oven-baked zucchini chips are both delicious and a healthy way to snack! Veggie chips rock my world. I buy large bags of them at Costco and go to town. They’re dangerously addicting and I feel like eating the entire bag helps me get more than a day’s worth of veggies in. Haha, or at least I’d like to think that way. Probably not the best. These oven-baked zucchini chips that I made are definitely made of REAL zucchinis and using my mandolin to slice up these discs was really relaxing. I was kind of sad when I came to the end of the zucchini and couldn’t slice up anymore, lol These delicate chips take a bit of time to make – honestly, waiting was probably the worst part of it. It’s extremely simple but having to wait for them t...

Clean Eating Cod Fish Recipe: A Healthy, Less Expensive Seafood Dish

Image
Clean Eating Cod Fish Recipe: A Healthy, Less Expensive Seafood Dish From all codfish recipes I know, this pan-fried clean eating cod fish might be the quickest dish. The correct culinary terminology would probably be pan-seared cod fish as I’m searing the fish in little oil and not frying it in an oil bath. This recipe is very simple to do at home and it is the way cod and similar white fish are often cooked in restaurant kitchens – although I admit I do it a bit different… For this recipe it is important that you have either fresh cod fish fillets or you thawed your frozen cod fish in your fridge for at least 5-6 hours. You can use cod fish with skin or without. I’ve used skinless cod fish. Ingredients 2-3 cod fish fillets 1/2 tsp salt some pepper 2 tbsp plain flour 2 tbsp oil (I use olive oil) Instructions Wash your fresh or thawed fillets under current cold water and dry them with kitchen roll. Heat oil in a frying pan. (The pan should be really hot) Mix flour with salt and pepper ...

HOMEMADE FUNFETTI CUPCAKES.

Image
HOMEMADE FUNFETTI CUPCAKES. It’s kind of getting annoying, right? Look at me! I’m obsessed with sprinkles! Wah wah wah. I need attention. Yeah. Not cool. I may as well just slap on some glitter eyeshadow and tease my hair. But in reality, I’m so obsessed with sprinkles because now that I’m in my mid-to-late (read: really late) 20s, it’s not so appropriate for me to be walking around sporting the newest shade of Urban Decay and blinding folks with glistening flecks from my lids. Um… what would you rather have? Me wearing loose sparkles on my eyes or a compulsion to bake you colorful vanilla cakes? Don’t mind my crumbs. I’m messy. So if you feel like creaming some butter and scooping some flour, you’re in for a treat. My favorite part? Different sprinkles. Wowza. Sometimes I use the regular old things – you may refer to them as jmmies, but I just can’t get behind that. Other times I use the nonpareils, which I love because they have super bright, fun colors. If you haven’t noticed, I lik...

HONEY GARLIC CHICKEN SKILLET

Image
HONEY GARLIC CHICKEN SKILLET This one is dee-licious. With the same, much loved flavor profile of honey garlic shrimp, we get to enjoy everyone’s favorite sauce with boneless, skinless chicken thighs or breasts. It’s simple to cook, quick and easy, but full of yum. And it’s 20-25 minutes (depending on the thickness of your chicken) from prep to table without lacking in flavor. Great for those quick weeknight dinners. Even though we patted the chicken dry with paper towels earlier, there might still be some angry spitting from the oil. So it’s always worth it to invest in a splatter guard. And wear an apron! Once it’s all cooked, drain the chicken on some paper towels and remove any excess oil from the pan. Reduce the heat to medium-low. Mix your sauce ingredients, toss the chicken back in and pour the sauce over the chicken. Make sure to keep the heat on medium-low as boiling the sauce too fast will burn and harden it into a sticky mess. And even though sticky sauce sounds great, burni...

“Better than Potatoes” Cheesy Cauliflower Puree – Low Carb

Image
“Better than Potatoes” Cheesy Cauliflower Puree – Low Carb A keto cauliflower puree that’s better than mashed potatoes?! A bold claim! But I stand behind it! And believe me, nobody is more surprised than I am! This is not normal for me and I credit the high satiety factor of the Keto cheesy cauliflower puree. Had I eaten mashed potatoes in the same way I would have been starving a few hours later for sure! Maybe there really is something to this whole low carb, high fat thing – it’s an interesting experiment at the very least. An added bonus? The scale showed a 2.5lb drop from yesterday. But even if you aren’t trying to watch your carb intake, you want to make this dish–it will change your mind about Keto cauliflower puree forever! I bought two heads of cauliflower yesterday and I’m so glad I did because I’ll be eating this for lunch again today! It’s only 9am and I already can’t wait! Yum! Update – Here’s a 60 second recipe video that shows the process and how easy it really is! This ...

30-Minute Sriracha Chicken and Broccoli Lo Mein

Image
30-Minute Sriracha Chicken and Broccoli Lo Mein Spicy, saucy, and full of flavor – this Sriracha Chicken and Broccoli Lo Mein is a million times tastier than any take-out you’ve ever had! An incredibly easy and satisfying 30-minute meal!Last month we packed up all of our belongings and said a teary-eyed farewell to New York City – a place we will always love and feel lucky to have called home for 6 long, wonderful years. I have to admit though, I was ready for the move.  Or, ready for a change, at least. One can only live in those conditions (read: necessary roommates, unavoidable cockroach confrontations, and perpetual subway traffic) for so long without needing a little break. So I’m embracing our time away from the big apple with arms flung wide open. I know we’ll be back soon enough (in fact, I’m catching the train in for the day tomorrow). And I can honestly say this upstate air is doing me worlds of good! Fresh air… peace and quiet… friendly neighbors who invite you to backya...

Custard Pudding

Image
Custard Pudding Custard Pudding This simple recipe makes the most amazing custard. Use it as a filling or as a delicious custard pudding. It thickens as it cools. In some countries, cornstarch is called corn flour. My (American) cornstarch has a very fine powdery texture, resembling powdered sugar. - Jenny Jones Prep Time: 10 minutes Cook Time: 5 minutes Total Time: 15 minutes Makes: 4 servings Ingredients: 1/2 cup sugar 2 Tablespoons cornstarch (not corn flour) 2 cups of 1% milk 2 egg yolks Instructions: In a medium saucepan, combine the sugar & cornstarch. Slowly whisk in the milk & egg yolks. Place over medium heat and bring to a boil. Cook about 1 minute, stirring constantly, until thickened. (it will thicken more as it cools) Pour into serving cups and let stand to cool or refrigerate, undisturbed, until it’s set – about an hour. Notes: For some reason, when I stir the pudding while it’s cooling, it refuses to thicken and set. So don’t stir it until it sets. recipe source ...

Fall in a glass, these cocktails are perfect for weekend entertaining this fall!  Where are my gin lovers out there!?  I absolutely love gin and tonics, especially in the summertime with fresh lemon, or basil and cucumber! I really want to create some gorgeous fall and winter cocktails that accentuated some beautiful fall flavours! Blueberry Muffins With Streusel Crumb Topping

Image
Blueberry Muffins With Streusel Crumb Topping This blueberry muffins recipe will soon become your favorite breakfast recipe keeper! It is perfect if you searching for delicious, refreshing and easy breakfast idea!! Unbelievable! I looked at all my posts again from my first blogging days and saw a very surprising fact for me. Among the 45 recipes that I posted until now, there is no recipe for muffins! “OMG, is that impossible” I thought to myself! Until a year ago, you could not imagine my kitchen without the smell of muffins. Since my cupcakes mania began with the blog Cupcakes Garden, every time when I got something out my cupcakes pan, the result was always cupcakes, not muffins! “It’s not fair” I thought to myself a few days ago and decided to make an apology to my dear old muffins. In the time when I made them often, on my repertoire were usually beautiful chocolate muffins, but since my blog is full of chocolate desserts, I decided to play around a little with some other flavors. ...
